1 red bell pepper, finely diced

1 red onion, minced

4 pieces of bay leaves

7 garlic cloves, minced

½ lb. Radish, finely chopped

2 red chilies, finely minced

1 tablespoon annatto seeds, soaked in ¼ cup water

2 tablespoons vegetable oil

1 cup vinegar

1 cup water

2 teaspoons fish sauce

sea salt and pepper to tastebuds

Directions:

Heat your oil in a pan over medium heat and sauté the garlic and onions until fragrant.

Add the pork innards, and allow to brown for about 5 minutes, stirring often.

Pour the water and vinegar, then allow to boil, then set to simmer for 10 minutes or until vegetables are tender.

Add the bell pepper, bay leaves, radish, and carrots. Continue to cook for 10 minutes or until veggies are tender.

Stir in the liver spread, chilies, and the liquid from the soaked annatto seeds, strain the solids, fish sauce, salt and pepper. Allow to simmer until the sauce becomes slightly thick. Serve hot and enjoy!
